This is a balanced Juniper forward spice blend common in southern German sausages and cuisine. This blend is excellent in fresh game meats.
Usage Ratios:
Frisch Wurst or fresh sausage:
1 1/2 - 2 T per 5lb of meat or 2.2Kg
Leberkase:
1 T per 1lb or 500g ground meat
Game Meats:
1/2 - 1 tsp per pound and always let sit in meat 15 minutes before freezing or cooking
