A Legacy of Flavor
Chef Donny's culinary journey began at the tender age of three in his grandmother's kitchen. Surrounded by the love and tradition of his grandmother, and great-grandmother from Tarvisio, Austria, he learned to knead and shape bread dough, a tactile connection to generations past. His great-grandmother shared the secrets of making Obatzda, while his grandmother taught him the art of crafting Frisch Kloster Bauernkase.
These early experiences ignited a passion for breads and cheeses, a commitment to preserving the rich heritage of Bavarian and Tyrolean culinary traditions.
The foundations of butchery were laid by his grandfather and father, teaching him to butcher animals from a young age. It was a profound discovery that his grandfather's authentic Bavarian sausage logs mirrored a method perfected by his 3rd great-grandfather in Bavaria during the early 1800s – a time when his ancestor's butcher shop began hand-mincing and pulverizing meat into seasoned, herb-infused logs wrapped in parchment.
